Carrot cake

This is a delicious recipe, so moist and creamy.

  • 4.75 oz butter
  • 1.5 cups flour
  • 1/2 cup pecans
  • 6.2 oz grated carrot
  • 1.5 big eggs
  • 1/6 cup milk
  • 1/2 teaspoon vanilla
  • 3/4 cup sugar
  • 1 tablespoon grated ginger
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon powder
  • Cream cheese and orange Frosting to decorate
  1. Preheat oven at 350°F
  2. Grease cake pan
  3. Toast pecans on the oven for a couple of minutes and chop
  4. Turn down oven to 300°F
  5. Combine carrots, eggs, milk, vanilla, sugar and ginger
  6. Sift together flour, baking powder, baking soda, cinnamon and salt
  7. Mix carrot mixture and flour
  8. Add butter and pecans
  9. Pour over the cake pan, bake for 35 minutes, until insert a toothpick comes out clean
  10. Let it cool and decorate with Cream cheese and orange Frosting. Chill for an hour

This is very simple and delicious, I recommend you to use Cream cheese and orange Frosting. Hope you like it.
