Carrot cake

This is a delicious recipe, so moist and creamy.
- 4.75 oz butter
- 1.5 cups flour
- 1/2 cup pecans
- 6.2 oz grated carrot
- 1.5 big eggs
- 1/6 cup milk
- 1/2 teaspoon vanilla
- 3/4 cup sugar
- 1 tablespoon grated ginger
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon powder
- Cream cheese and orange Frosting to decorate
- Preheat oven at 350°F
- Grease cake pan
- Toast pecans on the oven for a couple of minutes and chop
- Turn down oven to 300°F
- Combine carrots, eggs, milk, vanilla, sugar and ginger
- Sift together flour, baking powder, baking soda, cinnamon and salt
- Mix carrot mixture and flour
- Add butter and pecans
- Pour over the cake pan, bake for 35 minutes, until insert a toothpick comes out clean
- Let it cool and decorate with Cream cheese and orange Frosting. Chill for an hour
This is very simple and delicious, I recommend you to use Cream cheese and orange Frosting. Hope you like it.
