Enchiladas Suizas

This are my favorites enchiladas, these are enchiladas in tomatillo cream sauce. It’s so easy and delicious.
- 1 chicken breast cooked and shredded
- 1/2 cup sour cream
- 1 green chili
- 12 tomatillos
- 1/4 onion
- 15 tortillas
- grated cheese
- fresh coriander leaves
- oil for frying
- Cook with water tomatoes, chile, coriander and onion, for 10 minutes. Discard the water
- Blend the ingredients above, adding cream
- Heat the oil over a pan, fry the sauce for a few minutes, season with salt and pepper
- Fry tortillas on both sides
- Pour some sauce over the plate
- Dip the tortilla on the sauce, place it over the plate
- Place some chicken over one of the tortilla’s sides, roll up. Make 3 rolls
- Pour some sauce over it
- Add cheese and cream over the enchiladas
- Melt the cheese
You can melt the cheese by making the enchiladas on a baking dish and bake it until gold. You can serve it with white rice. I hope you like it.
